- 1 cup
broccoli florets
- 1 cup
bell peppers, chopped

- 1 tbsp
olive oil
- 1 tsp
garlic powder

Instructions
- Cook
the Quinoa: In a medium saucepan, combine quinoa and water or broth.
Bring to a boil, then reduce heat and simmer for 15 minutes, or until
quinoa is fluffy and water is absorbed.
- Roast
the Vegetables: Preheat oven to 400°F. Toss broccoli, bell peppers,
zucchini, and sweet potato with olive oil, garlic powder, salt, and
pepper. Spread evenly on a baking sheet and roast for 20–25 minutes,
stirring halfway through.
- Assemble
the Bowl: Divide quinoa into bowls and top with roasted vegetables.
Sprinkle with feta or nutritional yeast, drizzle with lemon juice and
balsamic glaze if desired.
