Ingredients (Serves 2-3)

  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium vegetable broth
  • 1 cup broccoli florets
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 small sweet potato, diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup feta cheese or nutritional yeast (optional)
  • 2 tbsp lemon juice
  • 2 tsp balsamic glaze (optional)

Instructions

  1. Cook the Quinoa: In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is fluffy and water is absorbed.
  2. Roast the Vegetables: Preheat oven to 400°F. Toss broccoli, bell peppers, zucchini, and sweet potato with olive oil, garlic powder, salt, and pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, stirring halfway through.
  3. Assemble the Bowl: Divide quinoa into bowls and top with roasted vegetables. Sprinkle with feta or nutritional yeast, drizzle with lemon juice and balsamic glaze if desired.
  4. Enjoy! Serve warm as a satisfying lunch or dinner that keeps you full and nourished.
